7 Layer Salad
This Seven Layer Salad so colorful and tastes absolutely delicious. We eat it along side our turkey at Thanksgiving, ham, or any cookout during the summer! The crunch from the veggies is delicious.
Bring it as a side dish at the next family gathering it will be a hit! (and no one will know how healthy it is)
Recipe:
Layer in the following order:
3/4 Head lettuce
1/4 Onion, grated
2 Celery Stalks, chopped
1 Cup Frozen Peas (see tips below to reduce carbs)
1/2 Can Water Chestnuts, sliced
1/4 Green Pepper, diced
1 Cup Mayo mixed with 1 Tablespoon sweetener
Top with 1 Cup shredded cheddar cheese
Sprinkle with bacon bits (3 slices) or chopped ham!
Cover tightly (airtight) and refrigerate 12-24 hours

Keto Dad Tips:
Decrease the water chestnuts and peas for lower carbs. You can add in more green pepper to replace the peas! Removing the peas reduced the carb count by about 2 per serving.
Add Bacon or Ham to make it a meal for lunch!
Still tastes great as leftovers
Changing the brand or type of Mayo can change the Macros quite a bit. Make sure to choose a healthy fat, sugar free option!
