Italian Chopped Salad

Italian Chopped Salad

One of the most beautiful salads out there! This Italian chopped salad is full of color and bursting with flavor. I love that it’s a salad you can make in advance - no lettuce leaves to wilt in the dressing. It’s a great option for lunch year round.

We save this as leftovers for about 3-4 days

Recipe:

4 cups fresh broccoli florets (blanched optional)
2 cups cauliflower
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, thinly sliced
1/2 cup green OR black olives, sliced
1 cup pepperoni, diced or sliced
1 cup salami, diced or sliced
1/2 cup pepperoncini peppers, sliced
1/2 cup mozzarella pearls or cubed mozzarella
1/4 cup grated Parmesan cheese

Combine all ingredients in a large bowl

Toss with about 1/4 cup Italian Salad Dressing

Chill about 15-20 min before serving

Serving Size: Makes 12 cups. Serving size is approximately 2 cups

The Keto Dad Tips and Tricks:

  • It’s easy to remove ingredients you don’t like! Just add a little more of something else

  • The meat used in this salad is slightly more processed than what we typically eat. You can cut back on it if you’d like or swap with ham.

  • We buy a keto friendly Italian dressing from Primal Kitchen

  • Green pepper is a great option if you want to remove an ingredient and add in another veggie.
