Ultimate Keto Low Carb Loaded Broccoli Salad

This Keto Broccoli salad recipe is SO GOOD we just eat it for lunch sometimes! We take it up a notch with cheddar cheese and bacon. And the flavor...it's a crowd pleaser for sure!

Broccoli salad is a summer BBQ staple, so we decided to make an easy Keto version. Make an extra batch because you won't have leftovers!

Keto low carb broccoli salad bacon

Recipe:
Mix together:

  • 3/4 C Avocado Mayo

  • 1 Tablespoon Apple Cider Vinegar

  • 2 T Granulated Erythritol (Swerve)

  • Pinch Salt

  • Dash Black Pepper

    Then add in:

  • 4 C Broccoli

  • 5 Slices Bacon, Cooked and Crumbled

  • 6oz Cheddar Cheese, Cubed

  • 3 Tablespoons Red Onion

Refrigerate and Serve!

Serves: 8, about 3/4 cup each
Calories: 265, Fat: 24g, Carbs: 5g, Fiber: 1g (Net Carbs 4), Protein: 7g

The Keto Dad Tips and Tricks:

  • We love to cook up a full batch of bacon and save it in the freezer. Use it to crumble into recipes like this, or just eat straight outta the freezer

  • The broccoli is raw!

  • We cube the cheddar cheese, but you can shred it as well.

  • If you need to adjust the macros, you can take out 1/4 C Avocado mayo or decrease the amount of cheese!
