Garlic Chicken Zucchini Skillet

We just love simple recipes that are perfect for busy week nights. This Garlic Chicken Zucchini skillet is a high protein, low carb recipe that cooks up quick - and it’s family friendly! Not into zucchini? You can switch it out with any low carb vegetable. We’ve made this with broccoli too!

Easy and satisfying - a healthy weeknight win!

Recipe:

1 lb Chicken Breast, diced
2 Medium Zucchinis, sliced
3 Tablespoons Butter
3 Cloves of Garlic
1/2 Cup Shredded Mozzarella Cheese
1/4 Cup Parmesan Cheese
1 teaspoon Italian Seasoning
Salt and pepper to taste

Heat 1 Tablespoon of butter in a large skillet over medium heat, adding diced chicken. Season with salt, pepper and Italian seasoning. Remove chicken and set aside.

Add remaining butter to the skillet and stir in garlic for about a minute. Add zucchini and more salt and pepper, cooking until the zucchini is tender.

Return the chicken to the skilled, toss with zucchini and sprinkle with cheese.

Cover and let cook until the cheese is melted.

Serving Size: Serves 2
Macros are with Zucchini. Adjust for different vegetables.

The Keto Dad Tips and Tricks:

  • You can use Broccoli too! We avoid cauliflower with this dish simply because everything would be white ;)

  • Prep ahead of time by washing and cutting your vegetables and chicken.

  • Make sure to season the dish. Add a little extra salt and pepper if needed.
