Keto Pizza with Lupin Flour
We tried this new Lupin Flour Keto Pizza recipe from Aviate and it tastes absolutely delicious! The crust is crunchy, has a great flavor, and is easy to make. Lupini or Lupin Flour is made with lupini beans - they’re low in net carbs, nut free, and Lupini Flour is becoming a staple in our Keto pantry!
Recipe:
1/2 cup Mozzarella Cheese, shredded
1 Tablespoon Cream Cheese
1 Cup Aviate Lupin flour
1/2 Tablespoon Olive oil
1/4 teaspoon salt
1 teaspoon Pizza Seasoning
1 Egg, beaten
Directions:
Mix together seasoning, salt and cheese.
Melt cheese in microwave for 30 seconds - just enough to melt it. Then add in flour, cream cheese (softened) and egg. Mix together with a spoon. You'll probably need to knead it by hand to mix it in!
Roll out thinly in-between parchment paper.
Bake for 10 min at 375 degrees. We bake it on the parchment paper on a baking stone.
Take out, add sauce of choice toppings and bake for another 5 min or until cooked.

The Keto Dad Tips and Tricks:
You can prep the crust ahead of time
If the dough gets hard, microwave it for 10-15 seconds to soften it up
Too many liquid ingredients can make the crust soggy - be careful using too much sauce, tomatoes etc!
To keep the crust crispy, transfer it to a cooling rack after baking.
