Dinner Plan: Week 1
Meal planning can make your Keto or Low Carb Lifestyle so much easier! No more stressing at 3pm about dinner or staring mindlessly into your pantry… we’ll give you some simple tips and recipes on how to meal prep for your week so you have everything you need! Here are 5 meals we love to serve and our family loves to eat!
A few tips:
Choose recipes that have leftovers you like! For us, it might mean casseroles we can also eat for lunch (Chicken Mac and Cheese or Lasagna).
Shredded Chicken is also another home run for us - we can use it for multiple meals and lunch OR dinner!
When we start meal planning, we pick 3 different meats and then choose dishes from there. That helps to make sure we have a variety of protein to stay healthy - and no one gets bored!
So here are some of our favorites…
Keto Palmini Lasagna:

Main Ingredients: Palmini Noodles, Ground Beef, Mozzarella Cheese
Why we like this recipe: This is a great meal prep recipe - you can make it on the weekend or after the family goes to bed and throw it in the freezer. Take it out the day before for it to thaw, or cook frozen! Never heard of Palmini noodles? It’s the one noodle my kids LOVE! And it comes in spaghetti too!
Simple Steaks:
Recipe: Ninja Foodi Steaks
Main Ingredients: Steak, any seasoning
Why we like this recipe: You don’t need a recipe for this one! We use our Ninja Foodi Grill when the weather is bad, or grill outside when it’s good! Either way, this is a simple recipe you can make any night. Side dish is any green veggie. Grill some asparagus (or saute on the stovetop with butter). Want to take it up a notch? Pair it with our Air Fried Cabbage! Pro tip: avoid sauces and marinades on your steak. It’s delicious with just seasoning!
Italian Stuffed Chicken:

Main Ingredients: Chicken Breast, Spinach, Cheeses, Egg, Pasta Sauce
Why we like this recipe: Italian night made easy - and pasta free! This is a super simple meal that takes just a few minutes to prep. Throw it in the oven and you’ve got a delicious dinner in just 30 minutes!
Creamy Broccoli and Cheese Soup:
Recipe: Broccoli Cheddar Soup
Main Ingredients: Broccoli/Cauliflower, Carrots, Zucchini, Broth, Cheddar Cheese, Heavy Whipping Cream, Onion, Butter Garlic
Why we like this recipe: There’s just a little prep work here to dice your veggies, but the results is a cheesy, flavor packed soup that is great for lunch, dinner, or leftovers!
Air Fried Bacon Wrapped Shrimp:
Recipe: Air Fried Shrimp
Main Ingredients: Shrimp, Bacon
Why we like this recipe: I’ve been seeing a lot more air fryers heading in to kitchens… here’s a simple recipe that tastes delicious! The key is to preheat your air fryer so the bacon cooks quick (and the shrimp don’t dry out). We did use pre-cooked shrimp. No air fryer? Cook them on a skewer on the grill! We love to pair this with creamed spinach!
