Macaroni and Cheese with Chicken
Keto dinner recipes in our house are always simple and full of flavor! We’ve tried Macaroni and Cheese with just cauliflower and it didn’t go over well. So we updated the recipe and added Chicken…and it was a hit!
Our kids love casseroles and they seem to be a common theme, especially as the weather gets colder. Boss Babe usually makes them during the day and then pops them in the oven a half hour before dinner. Without much effort, she has a great tasting dinner made fresh from the oven!

8x8 Baking dish
Pot to melt sauce and mix ingredients
Here are the Ingredients You’ll Need:
Shredded Chicken
Cauliflower
Mozzarella Cheese
Cheddar Cheese
Heavy Whipping Cream
Dijon (optional)
Green Onions

You can double the sauce if you’d like! It’s delicious!
Cauliflower works great as a macaroni substitute. Broccoli would be delicious also as a broccoli cheese casserole!
A common question is “do you blanch the broccoli and cauliflower”? Nope! We never do! And if you are using frozen, just add about 5 minutes to the cooking time and you’re good to go!
Recipe:
Cheese Sauce:
1.5 C Cheddar Cheese
3/4 C Heavy Whipping Cream
1 tsp Dijon Mustard (optional)
Salt and pepper optional
Melt ingredients together in a large sauce pot on low heat.
Add:
1Lb Shredded Chicken
3C Diced Cauliflower
Pour into baking dish and top with:
1.5 C Mozzarella Cheese
2T Green onions (optional)
Bake at 350 for 30 minutes.
