We’ve had our Instant Pot for the past year and use it almost every week. We’ve made soups, meats and desserts. We’ve sautéed, steamed and pressure cooked!

#1) It’s Pretty Close to being “Instant”!
I can’t tell you how many times we planned on making something in our crockpot - pulled pork, soup or chili…and then suddenly it’s 3pm and I’m browsing Target Clearance (haha) and realize DARN IT! I forgot to start the crockpot this morning! Dinner plans will have to change! With the Instant Pot, I can easily make the chicken for our dinner in the time it takes me to clean up lunch. If I get home at 4:30pm, I can still have dinner ready by 5:15…and the flavor is still there! I get the same tender meat as a day long crock pot recipe…without the planning!
So why not just cook on the stove? With two little kids, a dog, and a million things going on, I love not having to watch, stir, simmer my meals. Set it and forget it for 30 minutes is how I roll! No pots that the kids can grab or knock over and no sauces burned to the pan!
#2) The Meat is Super Tender!
One of my favorite things about the pressure cooker is how well the meat cooks! My chicken takes 11 minutes to cook (about 30 min total with heat up, pressure cook, and pressure release) and it’s so easy to shred. Recipe here! We love naked quesadillas (just load the toppings on that shredded chicken), chicken salad, and tons of casseroles. Pulled pork - same thing. Meatballs, meat loaf… you name it, it’s perfect every time!
#3) EGGS!!!
This benefit alone is worth the price of the Instant Pot! It’s no secret that eggs are a pretty big part of the Keto Lifestyle. Hard boiled eggs, egg salad, deviled eggs, etc… We buy farm fresh eggs from a local farm and it used to be that those eggs were next to impossible to peel. I literally dreaded hard boiling eggs because I knew that meant I would sit there slowly mutilating a pot full of delicious eggs! But with the Instant Pot 5-5-5- Recipe (seriously - check it out!), my beautiful farm fresh egg shells literally melt off! Our 5 year old can even peel them on her own!
#4) Huge Variety of Recipes

With my instant pot, I can now get rid of my Crockpot and skip the pan when I need to sauté the mushrooms for my soup. Anything I can do to simplify my kitchen and free up cabinet space is a plus for me!
So is the Instant Pot required to be successful on the Keto lifestyle? No! You can still use your crockpot, cook in your oven, and boil eggs in the stove.
